  • ¾ cup packed brown sugar 150g
  • 2 large eggs room temperature
  • 2 teaspoons pure vanilla extract

Preparation

  • Start by allowing the butter and eggs to reach room temperature for optimal mixing.
  • In a medium bowl, whisk together the flour, baking soda, and salt until well combined.
  • Using a mixer, cream the softened butter for about 1 minute until it's smooth and fluffy. Gradually add both granulated and brown sugars, beating the mixture for 3-4 minutes until it lightens in color.
  • Introduce the eggs one at a time, ensuring well incorporation after each addition, then stir in the vanilla extract.
  • Slowly add the flour mixture to the wet ingredients, mixing on low speed until just combined.
  • Using a spatula, gently fold in the chocolate chips; this step is key to ensuring even distribution.
  • Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes for optimal texture.

Baking

  • Preheat your oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper.
  • Portion the dough into 2-tablespoon balls, placing them approximately 2 inches apart on the sheet.
  • Bake for 10-12 minutes, until the edges are golden but the centers appear slightly under-baked.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a richer taste, use cold butter instead of room-temperature butter. Experiment with different types of chocolate chips or add nuts and fruits for customization. Don't skip the chilling step — it helps develop flavor and improves texture.
