  • 2 pounds beef chuck, cut into 1-inch pieces Use quality beef for the best flavor.
  • 4 cups beef broth Opt for homemade or high-quality broth.
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil For browning the beef.
  • 1 leaf bay leaf

Cooking Instructions

  • In a large pot, heat olive oil over medium-high heat.
  • Add the beef chunks and brown on all sides.
  • Remove the beef and set aside.
  • In the same pot, add onions and garlic; sauté until soft.
  • Stir in the tomato paste, then return the beef to the pot.
  • Add the beef broth, carrots, potatoes, thyme, rosemary, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat to low.
  • Cover and simmer for 2-3 hours until the beef is tender.
  • Adjust seasoning as needed before serving.

Notes

Witch’s Cauldron Beef Stew is best served hot with crusty bread or warm dinner rolls. For added flavor, garnish with freshly chopped parsley.
