Ingredients
  

For the Chicken

  • 2 tablespoons olive oil (or avocado oil) Substitute avocado oil if desired.
  • 1.5 pounds boneless skinless chicken breast (cut into 1" cubes) Use tender chicken cubes for the best texture.
  • 2 teaspoons garlic salt (or salt, divided) Use divided for flavor adjustment.
  • 1/2 teaspoon black pepper Adjust based on taste preference.
  • 1 tablespoon fresh minced garlic Add towards the end of chicken cooking.

For the Sauce

  • 1 13.66-ounce can full-fat unsweetened canned coconut cream (chilled; solid part only) Use only the solid part for the creamiest sauce.
  • 1 cup chicken broth Additional may be added if sauce is too thick.
  • 1/4 cup nutritional yeast For a cheesy flavor without dairy.
  • 1 teaspoon dried oregano Herbs can be substituted for freshness.
  • 1-2 tablespoons arrowroot or potato starch Use for thickening the sauce.
  • 1 8-ounce jar sun-dried tomatoes (drained, blotted dry, and chopped) Use about 1/3 cup chopped.
  • 0.5 ounces fresh basil Optional but enhances flavor.

Instructions
 

Cooking the Chicken

  • In a large skillet, heat the olive oil over medium heat.
  • Add the cubed chicken breasts and sprinkle with 1 teaspoon of salt and 1/2 teaspoon of pepper; cook for about 5-7 minutes until golden brown.
  • In the last minute of cooking, add the minced garlic, cooking until fragrant.

Preparing the Sauce

  • In a medium mixing bowl, whisk together the chicken broth, nutritional yeast, dried oregano, the remaining 1 teaspoon of salt, and 1 tablespoon of the starch.
  • Chop the sun-dried tomatoes, ensuring they are well-dried to prevent oiliness in the final dish.

Combining and Simmering

  • Once chicken is cooked, add the chopped sun-dried tomatoes to the pan and stir.
  • Add the solid part of the chilled coconut cream and mix until melted.
  • Add the chicken broth mixture to the pan, bring sauce to a boil, then reduce to a simmer and thicken for about 5 minutes.
  • Adjust consistency by adding broth or starch as needed; taste and adjust salt if necessary.

Serving

  • Serve Whole30 Marry Me Chicken with your favorite veggies or over steamed cauliflower rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze in portion sizes for up to 2 months. For best texture, thaw in the refrigerator before reheating.
