  • 8 oz lasagna noodles, broken into pieces
  • 4 cups chicken or vegetable broth
  • 2 cups heavy cream
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

Preparation

  • In a large pot, brown the ground meat over medium heat until it's well cooked.
  • Add the diced onion and minced garlic. Cook until they're soft and fragrant.
  • Stir in the Italian seasoning, along with salt and pepper for flavor.
  • Pour in the chicken or vegetable broth and bring the mixture to a boil.
  • Add the broken lasagna noodles and allow them to cook according to the package instructions until they reach al dente.
  • Reduce the heat, then stir in the heavy cream, ricotta cheese, and mozzarella cheese.
  • Continue to cook until the cheese melts, resulting in a creamy, dreamy soup.
  • Serve hot, garnished with grated Parmesan and fresh basil, alongside some crusty bread.

Notes

Ladle it into bowls and top with additional cheese or a sprinkle of red pepper flakes for a kick. Pair it with slices of fresh, crusty bread or a simple side salad to balance the richness. For leftovers, store in an airtight container for 3-4 days or freeze for up to three months.
