  • 2 tbsp butter or olive oil Use either depending on dietary preference.
  • ¾ cup heavy cream, milk, or plant-based milk Any type of milk will work.
  • ¼ cup grated Parmesan or Pecorino cheese Optional for cheese lovers.
  • ½ tsp salt Adjust to taste.
  • ¼ tsp black pepper
  • Pinch nutmeg Optional for additional flavor.
  • Fresh or dried herbs (thyme, basil, oregano) Optional for added aroma.

Preparation

  • Roast or sauté minced garlic until fragrant. Optionally, sauté onions or shallots for depth.
  • In a saucepan over medium-low heat, melt the butter or warm the olive oil.
  • Add garlic and cook for 1–2 minutes until aromatic, avoiding browning.
  • Gradually pour in cream or milk, whisking to combine.
  • If using cheese, slowly mix in grated Parmesan to enrich flavor and thicken the sauce.
  • Sprinkle in salt, pepper, and nutmeg, adjusting gradually to taste.
  • For a smoother consistency, use an immersion blender.
  • Adjust consistency by adding more milk or broth to thin out, or simmer until thickened.
  • Use immediately on fresh pizza dough, drizzle over pasta, or refrigerate/freeze for later.

Notes

Storage: Refrigerate for up to a week or freeze for three months. Reheat on low heat, whisking occasionally.
