Ingredients
  

Main Ingredients

  • 3/4 cup lime juice (freshly squeezed) Best when freshly squeezed
  • 1/4 cup packed mint leaves Plus extra for garnish
  • 1/2 cup sugar
  • 1/2 cup white rum Can substitute with regular rum
  • 1/2 cup coconut rum Optional for tropical flavor
  • 1 cup canned coconut milk
  • sparkling water To top off each glass
  • pomegranate arils For garnish

Preparation

  • In a large pitcher, muddle the mint leaves with the sugar and lime juice to release the flavors.
  • (Optional) Strain out the mint leaves for a smoother drink.
  • Fill four glasses halfway with ice.
  • Pour the rum mixture into each glass until they are about 3/4 full.
  • Top each glass with sparkling water and give it a gentle stir.
  • Garnish with fresh mint leaves and a few pomegranate arils.

Notes

Store mojito mixture without sparkling water in the fridge for up to 24 hours. Add sparkling water just before serving for maximum fizz.
