For the fudge

  • 2 cups white chocolate chips Use good quality for best flavor.
  • 1 can sweetened condensed milk
  • 1 cup fresh raspberries
  • 1 teaspoon vanilla extract For extra flavor.
  • 1/2 cup raspberry puree Optional for enhanced flavor.

Preparation

  • Line an 8x8 inch baking dish with parchment paper to prevent sticking.
  • In a medium saucepan, combine white chocolate chips and sweetened condensed milk over low heat. Stir continuously until the mixture is melted and smooth.
  • Once melted, remove from heat and stir in the vanilla extract.
  • Carefully fold in the fresh raspberries and raspberry puree if using, ensuring not to break the berries too much.
  • Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.
  • Chill in the refrigerator for at least 2 hours or until the fudge is completely set.
  • Once firm, cut it into squares and serve.

Notes

Store in an airtight container in the refrigerator for up to two weeks. Freeze for up to three months; wrap tightly to prevent freezer burn.
