  • 1.5 lbs lean ground beef Use lean meat for a healthier option
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 cups tomato sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup beef broth
  • 2 tsp Italian seasoning
  • to taste Salt and pepper
  • 2 tbsp olive oil For sautéing
  • 1 cup shredded mozzarella or Parmesan cheese Can use either cheese based on preference
  • ½ cup breadcrumbs Optional topping

Instructions
 

Preparation

  • In a large skillet over medium heat, heat the olive oil.
  • Add the chopped onion and sauté for 3-4 minutes until it turns translucent.
  • Stir in the garlic, carrots, and bell peppers, cooking for an additional 5-7 minutes.
  • Push the vegetables to the side of the skillet and add the ground beef. Cook until it browns, about 5-7 minutes.
  • Drain excess fat if necessary.

Cooking

  • Add the tomato sauce, diced tomatoes, and beef broth to the skillet.
  • Season with Italian seasoning, salt, and pepper, and let it simmer for about 10 minutes.

Baking

  • Preheat the oven to 375°F (190°C).
  • Pour the beef mixture into a casserole dish. Top with cheese and breadcrumbs if using.
  • Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  • Allow it to cool for 5-10 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Freeze for longer storage.
