Ingredients
  

For the Apple Filling

  • 8 pieces Granny Smith apples About 9 cups sliced
  • 2 tbsp butter For sautéing apples
  • ½ cup sugar For sweetening the filling
  • 1 tsp cinnamon Adds warmth and flavor
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • Juice of ½ lemon Juice of ½ lemon

For the Butter Pie Crust

  • 2 ½ cups flour For the crust
  • 1 tsp salt
  • 1 cup cold butter Diced
  • ½ cup ice water To bind the dough

For the Toffee Sauce

  • ¼ cup butter For making the sauce
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 4 tbsp cornstarch

For the Vanilla Custard Sauce

  • 1 piece egg
  • 1 tbsp water
  • 2 cups milk
  • 3 pieces egg yolks
  • cup sugar
  • 1 tbsp cornstarch
  • Pinch of none salt
  • 2 tsp vanilla extract
  • 1 tbsp butter

Instructions
 

Prepare the Apple Filling

  • In a large pan, melt 2 tbsp of butter over medium heat.
  • Add the sliced Granny Smith apples, sugar, cinnamon, nutmeg, allspice, salt, and lemon juice. Cook until the apples are tender, about 10 minutes. Set aside to cool.

Make the Butter Pie Crust

  • In a bowl, combine flour and salt.
  • Cut in the diced butter until the mixture resembles coarse crumbs.
  • Slowly add ice water until the dough holds together. Form it into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

Prepare the Toffee Sauce

  • In a saucepan over low heat, melt ¼ cup of butter.
  • Stir in brown sugar, heavy cream, and cornstarch until smooth. Cook and stir until thickened. Set aside.

Assemble the Toffee Apple Pie

  • Preheat your oven to 425°F (220°C).
  • Roll out the chilled pie crust and place it in a pie dish.
  • Pour the apple filling into the crust, drizzle with toffee sauce, and cover with another layer of pie crust. Cut slits for steam to escape.

Bake the Pie

  • Bake for 25-30 minutes or until golden brown. Allow cooling.

Make the Vanilla Custard Sauce

  • Whisk the egg and water together. In a saucepan, heat milk until warm but not boiling.
  • Slowly whisk in the egg mixture, sugar, cornstarch, and salt. Cook gently until it thickens. Stir in vanilla extract and butter.

Notes

For a richer flavor, consider adding a splash of bourbon or apple brandy to the apple filling. Make sure your butter is cold for the pie crust to ensure a flaky texture. Use a mix of different apple varieties for a more complex flavor.
