For the meatballs

  • 1 pound ground chicken
  • 2 tablespoons red curry paste
  • 1 tablespoon grated ginger
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Cooking Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground chicken with red curry paste, ginger, breadcrumbs, egg, soy sauce, garlic powder, salt, and pepper. Mix until everything is well incorporated.
  • Shape the mixture into meatballs and arrange them on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for about 15-20 minutes, or until they’re cooked through and golden on the outside.
  • Serve hot with a side of peanut dipping sauce for extra flavor.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. They can also be frozen for up to 3 months.
