  • 3 to 4 pieces boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese Can be swapped with cheddar for a sharper flavor.
  • 2 tablespoons olive oil
  • 2 to 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 0.5 cup sour cream Can be swapped with Greek yogurt for a healthier twist.
  • Salt, to taste
  • Black pepper, to taste
  • Chopped green onions For garnish.
  • Paprika For garnish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Rub olive oil over the chicken breasts, then season both sides with salt and black pepper.
  • Heat a skillet over medium-high heat. Sear the chicken for about 5 minutes per side until golden brown.
  • Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth to deglaze, scraping any browned bits from the skillet.
  • Lower the heat to medium and stir in the sour cream until the sauce is smooth. Simmer for 5 minutes.

Baking

  • Place the chicken breasts in a baking dish and evenly spoon the sauce over each piece. Top generously with shredded Jack cheese.
  • Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.

Serving

  • Once out of the oven, sprinkle with chopped green onions and paprika before serving warm.

Notes

For even more flavor, let the chicken marinate in olive oil, salt, and pepper for a few hours prior to cooking. Can use a slow cooker if desired.
