  • 1 32 oz bag frozen tater tots For a crispy base and topping.
  • 1 pound ground breakfast sausage Cook until browned.
  • 1 cup diced onion Can sub with other vegetables if preferred.
  • 2 cups shredded cheddar cheese Or your favorite cheese.
  • 6 large eggs For the egg mixture.
  • 1 cup milk Whole milk recommended.
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Can add more for extra spice.
  • 1 tablespoon chopped fresh parsley Optional for garnish.

Preparation

  • In a large skillet over medium heat, cook the ground breakfast sausage until it is browned and fully cooked. Drain any excess grease.
  • Grease a baking dish and spread half of the frozen tater tots evenly across the bottom.
  • Sprinkle the cooked sausage evenly over the tater tots, then distribute the diced onions on top.
  • Add a generous layer of shredded cheddar cheese over the sausage and onion mixture. Top with the remaining frozen tater tots.
  • In a bowl, whisk together the eggs, milk, salt, pepper, and any preferred herbs until smooth.

Baking

  • Carefully pour the egg mixture evenly over the casserole layers.
  • Bake at 375°F (190°C) for 40-45 minutes, or until set, golden, and bubbly.

Serving

  • Let it cool for a few minutes before slicing into squares. Serve warm, garnished with parsley or herbs.

Notes

Consider adding bell peppers or spinach for extra flavor. You can also make it ahead of time and bake it in the morning.
