  • 2 cups cooked chicken, diced
  • 2 ears of corn, grilled and kernels removed
  • 1 cup cooked rice or quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • to taste salt and pepper
  • optional cheese for topping

Preparation

  • In a large bowl, mix together the cooked chicken, grilled corn, cooked rice or quinoa, black beans, cherry tomatoes, diced avocado, red onion, and cilantro.
  • Drizzle the mixture with fresh lime juice, and season it with salt and pepper to taste.
  • Gently toss everything together until well combined, being careful not to mash the avocado.
  • Serve the mixture in bowls, topping with cheese if desired. Enjoy your flavorful and filling street corn chicken bowl!

Notes

For added crunch, serve with tortilla chips on the side. A dollop of sour cream or a splash of hot sauce can also elevate the flavors. Great to enjoy cold as a salad!
