  • 2 pieces ripe avocados Look for avocados that are slightly soft to the touch.
  • 1 tablespoon lime juice Juice from 1 lime to brush on avocado halves.

For the Chicken Salad

  • 2 cups rotisserie chicken, shredded Any leftover cooked chicken can be substituted.
  • 1/4 cup mayonnaise Consider swapping for Greek yogurt for a lighter option.
  • 1/4 cup Greek yogurt Optional for extra creaminess.
  • 1/4 cup celery, chopped
  • 1/4 cup red onion, chopped
  • 1 teaspoon chili powder Start with less if hesitant about spice.
  • 1 teaspoon paprika
  • to taste Salt
  • 1 tablespoon fresh cilantro, chopped Optional for garnish.

Preparation

  • Cut the avocados in half and carefully remove the pits.
  • Brush the avocado halves with lime juice to stop them from browning.
  • In a mixing bowl, combine the shredded rotisserie chicken, mayonnaise, Greek yogurt (if desired), chopped celery, red onion, chili powder, paprika, and a pinch of salt.
  • Generously spoon the chicken salad mixture into the avocado halves.
  • Serve immediately, garnished with fresh cilantro if you like.

Notes

For best freshness, consume the stuffed avocados within one day. Wrap them tightly in plastic wrap to keep air out if storing leftovers.
