Ingredients
  

For the crust

  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.25 cups 1/4 cup sugar
  • 0.5 cups 1/2 cup melted butter

For the filling

  • 2 packages (8 oz) 2 (8 oz) packages cream cheese, softened Use room temperature for smoother filling.
  • 0.75 cups 3/4 cup sugar
  • 2 large 2 large eggs
  • 1 teaspoon 1 teaspoon vanilla extract
  • 0.5 cups 1/2 cup strawberry puree Reserve some for swirling.

For garnish

  • Fresh strawberries (for garnish)
  • Strawberry sauce (for drizzle)

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, combine graham cracker crumbs, sugar, and melted butter to make the crust.
  • Press into the bottom of a 9-inch springform pan.

Making the filling

  • In another bowl, beat together the cream cheese, sugar, eggs, and vanilla extract until smooth.
  • Stir in the strawberry puree, reserving some for swirling.
  • Pour the filling over the crust, and use a knife to gently swirl in some of the reserved strawberry puree.

Baking

  • Bake for about 50 minutes, or until the center is set.
  • Let it cool at room temperature, then refrigerate for at least 4 hours.

Serving

  • Garnish with fresh strawberries and drizzle with strawberry sauce before serving.

Notes

Use room temperature cream cheese for a smoother filling. Don't skip refrigerating the cheesecake; this helps it firm up. You can experiment with different flavors by adding other fruits or using different crust options.
