Ingredients
  

For the filling

  • 2 cups fresh spinach Washed and chopped
  • 1 cup feta cheese, crumbled Can substitute with goat cheese or mozzarella

For preparation

  • 4 large tortillas For gluten-free option, use gluten-free tortillas
  • 1 tablespoon olive oil For sautéing
  • Salt and pepper To taste

Instructions
 

Cooking the Filling

  • In a skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the spinach and sauté until it wilts, about 2 minutes.
  • Remove from heat, then stir in the crumbled feta cheese. Season with salt and pepper to taste.

Assembling the Quesadillas

  • Place a tortilla in the skillet, then spread the spinach and feta mixture over half of the tortilla.
  • Fold the tortilla in half and cook until golden brown, about 2-3 minutes on each side.
  • Continue the process with the remaining tortillas.

Serving

  • Cut the quesadillas into wedges and serve on a platter.
  • Pair with salsa, guacamole, or sour cream for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be reheated in a skillet or oven.
