  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk Can be replaced with a dairy-free alternative.
  • 1 large egg
  • 2 tablespoons melted butter Substitute with coconut oil for dairy-free.
  • 1 teaspoon vanilla extract

Topping

  • 1/2 cup cinnamon sugar Can be made by mixing sugar and cinnamon.

Instructions
 

Preparation

  • Whisk together the flour, sugar, baking powder, and salt in a large bowl until well combined.
  • In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined; lumps are fine.

Cooking

  • Heat a non-stick skillet over medium heat and lightly grease it.
  • For each pancake, pour 1/4 cup of batter onto the skillet.
  • Cook until bubbles appear on the surface, then flip and cook until golden brown on both sides.
  • Sprinkle generously with cinnamon sugar immediately after removing from skillet.
  • Repeat with the remaining batter.

Notes

For fluffy pancakes, avoid overmixing. Ensure skillet is properly heated before cooking.
