S'mores Cracker Cookies

  • 48 pieces Ritz crackers
  • 7 oz marshmallow crème
  • 24 oz chocolate almond bark Melted for dipping
  • 1 cup graham crackers (crushed) For topping

Instructions
 

Preparation

  • In a microwave-safe bowl, melt the chocolate almond bark in 40-second intervals, stirring in between until completely melted.
  • Lay out Ritz crackers on a long sheet of wax paper.
  • Add a small dollop of marshmallow crème to the center of half the crackers. Place another cracker on top, gently pressing down to ensure the marshmallow crème spreads evenly.

Dipping and Topping

  • Using a fork or candy tongs, grab a cracker sandwich and dip it into the melted chocolate. Gently tap the fork against the side of the bowl to remove excess chocolate.
  • Place the dipped cracker back on the wax paper. Immediately sprinkle with graham cracker crumbles, tiny marshmallows, and/or mini chocolate chips if desired.

Setting and Storing

  • Allow the cookies to sit on the wax paper until the chocolate hardens completely.
  • Place the cookies in an air-tight container for storage.

Notes

To keep the cookies fresh, store them in an air-tight container at room temperature for 5 to 7 days. Avoid refrigerating them, as this may affect the texture of the chocolate coating.
