Preparation

  • Heat a skillet or griddle over medium-high heat.

Cooking

  • Place the tortillas beef-side down in the skillet and cook for 2-3 minutes until browned.
  • Flip each tortilla, sprinkle cheese on top, then fold in half.
  • Grill for 1-2 minutes on each side until crispy and cheese is melted.

Serving

  • Remove from heat, slice into wedges, and serve with toppings or dipping sauces.

Notes

For leftovers, store in an airtight container in the fridge for up to three days, or freeze for up to two months. Reheat in a skillet or oven for best texture. To elevate quesadillas, consider using a mix of cheeses or pre-cooking your ground beef with onions and bell peppers.
