  • 2 lbs chicken breasts Boneless and skinless
  • 1 cup sweet chili sauce
  • 1/2 cup soy sauce Use gluten-free soy sauce for a gluten-free option
  • 1/4 cup rice vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/2 cup bell peppers, chopped Any color bell pepper works
  • 1/4 cup green onions, chopped For garnish
  • Salt and pepper To taste

Preparation

  • Place the chicken breasts directly into the slow cooker.
  • In a bowl, combine the sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger. Mix until well blended.
  • Pour the sauce mixture over the chicken.
  • Add the chopped bell peppers, and season with salt and pepper to taste.

Cooking

  • Cover the slow cooker with its lid. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  • Once cooked, shred the chicken using two forks and mix it back into the flavorful sauce.

Serving

  • Serve hot, garnished with fresh green onions.

Notes

For a vegetarian option, swap the chicken for tofu. Leftovers can be stored in an airtight container for up to 4 days in the refrigerator and up to 3 months in the freezer.
