  • 4 pieces boneless, skinless chicken breasts
  • 1 pound baby red potatoes, halved or quartered if large
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley for garnish (optional) Optional garnish

Preparation

  • Wash and pat dry the chicken breasts. Set them aside on a cutting board.
  • In a mixing bowl, combine the grated Parmesan cheese, minced garlic, salt, black pepper, and Italian seasoning. Stir well until the spices are evenly mixed.
  • Coat the chicken breasts with the cheese and seasoning mixture, pressing slightly to ensure it sticks well to the chicken.

Cooking

  • Add olive oil to the bottom of the slow cooker. Place the seasoned chicken breasts inside, arranging them in a single layer for even cooking.
  • Add the halved potatoes on top of and around the chicken, sprinkling them evenly.
  • Pour the chicken broth over the chicken and potatoes for added flavor and moisture.
  • Cover the slow cooker with its lid and cook on low for 6 to 8 hours, or on high for 3 to 4 hours. Cooking times may vary based on your slow cooker model.
  • Once cooked, check that the chicken is thoroughly cooked and the potatoes are tender by using a meat thermometer (165°F for chicken).
  • Transfer the chicken and potatoes to a serving dish. If desired, garnish with chopped fresh parsley before serving.

Notes

For a more pronounced flavor, consider marinating the chicken in the seasoning mix and olive oil for an hour or two before slow cooking. You can add vegetables like carrots or green beans into the slow cooker for added nutrition and variety. Sprinkle some lemon juice over the finished dish right before serving for extra flavor.
