Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 2 pieces lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 1 cup chicken broth

For the Rice

  • 1 cup long-grain rice
  • 2 cups water
  • to taste Fresh herbs (for garnish, optional)

Preparation

  • In a bowl, mix lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
  • Place the chicken breasts in the slow cooker and pour the lemon herb mixture over them.
  • Pour chicken broth around the chicken.

Cooking

  • Cover and cook on low for 4-6 hours or until the chicken is cooked through.
  • In a separate pot, bring water and rice to a boil. Then reduce heat to low, cover, and simmer for about 18 minutes.
  • Fluff rice with a fork.
  • Serve the chicken over rice, garnished with fresh herbs if desired.

Notes

For best results, marinate the chicken for a few hours before cooking. Avoid overcooking the chicken to keep it juicy. Add vegetables for a wholesome meal or use cauliflower rice for a healthier option. Spicy options can also be created by adding red pepper flakes.
