  • 1 lb chicken breasts Can substitute with chicken thighs for juiciness.
  • 5 medium potatoes, chopped Chop into bite-sized pieces.
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika For seasoning potatoes.
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • 1 cup shredded mozzarella cheese
  • enough Buffalo Wild Wings Garlic Parmesan Sauce To coat chicken.

Instructions
 

Preparation

  • Wash and chop the potatoes into bite-sized pieces. In a mixing bowl, toss them with olive oil, salt, pepper, garlic powder, and paprika until well coated.
  • Place the seasoned potatoes at the bottom of your slow cooker.
  • Season the chicken breasts generously with salt, pepper, paprika, onion powder, and Italian seasoning. Lay them on top of the potatoes.
  • Spread the minced garlic evenly over the chicken, then pour enough Buffalo Wild Wings Garlic Parmesan Sauce to coat it thoroughly.

Cooking

  • Cover your slow cooker and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and the potatoes are tender.
  • In the final 30 minutes of cooking, sprinkle the shredded mozzarella cheese over the top. Cover again and allow it to melt.

Serving

  • Serve warm with extra Parmesan or fresh herbs if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat to an internal temperature of 165°F for safety. For meal prep, complete the steps but don’t cook until ready to serve.
