Ingredients
  

Main Ingredients

  • 1.5 lbs chicken breasts, diced into 1-inch pieces Make sure to season generously.
  • 1 lb andouille sausage links, sliced into 1/2-inch pieces Can be substituted with smoked or turkey sausage.
  • 1 Tbsp Cajun seasoning Consider marinating chicken overnight for enhanced flavor.
  • 1/2 onion, diced into small pieces
  • 1 red bell pepper, diced into large pieces
  • 1 green bell pepper, diced into large pieces
  • 2 stalks celery, sliced
  • 2 tsp minced garlic
  • 1 can crushed tomatoes (14.5 oz can)
  • 2 tsp dried oregano
  • 1 cup chicken broth Adjust for thickness preference.
  • 3 cups cooked rice Stir in just before serving.

Preparation

  • Gather all ingredients before starting.
  • Place all ingredients except cooked rice into the slow cooker.
  • Cover the slow cooker.
  • Cook on low for 6 to 8 hours or high for 3 to 4 hours until the chicken is cooked through and tender.
  • Stir in the cooked rice right before serving.
  • Enjoy warm with your favorite garnishes!

Notes

Serve with crusty bread or cornbread and a green salad for a complete meal. Store leftovers in airtight containers for 3-4 days, or freeze for longer storage.
