  • 2 pounds beef roast
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste Salt and pepper for seasoning
  • 2 tablespoons cornstarch (optional) for thickening

Preparation

  • In a slow cooker, combine the beef roast, chopped onion, and minced garlic.
  • Pour in the beef broth and Worcestershire sauce, and season with thyme, salt, and pepper.
  • Cover and cook on low for 7-8 hours or until the beef is tender.
  • For thicker gravy, mix cornstarch with a little water and stir into the slow cooker 30 minutes before serving.
  • Shred the beef and serve with gravy.

Notes

Serve over mashed potatoes or egg noodles, and can be stored in an airtight container in the fridge for 3-4 days. Warm leftovers in the microwave or on the stove with a splash of beef broth.
