Preparation

  • Preheat the oven to 350°F (175°C) and line a small baking sheet with parchment paper.
  • In a medium-sized bowl, combine oat flour, non-dairy milk, protein powder, peanut butter, and maple syrup. Stir until fully incorporated.
  • Gently fold in the chocolate chips.
  • Transfer the dough onto the prepared baking sheet and shape it into a cookie.
  • Bake in the oven for 7-10 minutes until the edges are golden brown.
  • Let the cookie cool for a few minutes before enjoying.

Notes

To enhance your experience, pair the cookie with almond milk or yogurt, crumble over a smoothie bowl, or have it with tea. Store in an airtight container at room temperature for up to three days or refrigerate for a week. Freeze for up to a month.
