  • 2 slices slices of bread Use your favorite type of bread—sourdough, whole grain, or brioche.
  • 2 eggs eggs Cook to desired doneness.
  • 1/4 cup ricotta cheese Spread evenly on the toast.
  • Salt and pepper to taste For seasoning.
  • Olive oil For cooking the eggs.
  • Fresh herbs (optional) For garnish.

Preparation

  • Toast the slices of bread until golden and crispy.
  • In a non-stick pan, heat a little olive oil over medium heat.
  • Crack the eggs into the pan and cook them to your desired doneness: sunny-side up, over-easy, or scrambled.
  • While the eggs are cooking, spread the ricotta cheese evenly on each slice of toast.
  • Once the eggs are cooked, place one egg on each slice of toast.
  • Sprinkle with salt and pepper to taste, and add fresh herbs for garnish if desired.
  • Serve the toast immediately while it’s warm.

Notes

Presentation is key! Serve on a white plate and pair it with a light salad or fruit for a complete breakfast. For best flavor and texture, serve fresh. Store cooked eggs and toast separately in airtight containers for up to 1-2 days.
