  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes Choose firm and smooth sweet potatoes for best flavor.
  • 3 tablespoons olive oil
  • 2 tablespoons honey Can substitute with maple syrup for a vegan option.
  • 1 teaspoon ground cinnamon
  • to taste Salt

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine the sweet potato cubes with olive oil, honey, ground cinnamon, and salt. Toss well to ensure the sweet potatoes are evenly coated.

Roasting

  • Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  • Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and caramelized. Stir halfway through for even cooking.
  • Once roasted, remove the sweet potatoes from the oven and transfer them to a serving dish. Sprinkle with chopped fresh parsley for a pop of color.
