A flavorful and healthy twist on the classic Greek dish, this vegetarian gyro features crispy roasted chickpeas, fresh veggies, and creamy tzatziki wrapped in warm pita bread.

Ingredients
  

For the roasted chickpeas

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper

For assembly

  • 4 pieces Pita bread
  • 1 cup Tzatziki sauce Store-bought or homemade
  • 1 cup Sliced cucumber
  • 1 cup Sliced tomatoes
  • 1 cup Red onion slices
  • for garnish Fresh parsley

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the drained chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  • Spread the seasoned chickpeas on a baking sheet in a single layer.

Roasting

  • Roast the chickpeas in the oven for 20-25 minutes, or until they become crispy and golden brown.
  • During the last few minutes of roasting, place the pita bread in the oven to warm it up.

Assembly

  • Once the chickpeas are ready, assemble your gyros by placing a generous amount of roasted chickpeas inside the warm pita.
  • Top with tzatziki sauce, sliced cucumber, tomatoes, red onion, and garnish with fresh parsley.
  • Serve immediately and enjoy your delicious gyros!

Notes

Store leftover components separately to maintain freshness. Chickpeas can last in the refrigerator for up to 3 days. Reheat for crispiness before assembly. For added flavor, consider experimenting with cayenne pepper or other spices.
