  • 1 cup peanut butter Smooth or crunchy peanut butter can be used.
  • 1/2 cup sugar
  • 1/2 cup brown sugar Packed brown sugar for sweetness.
  • 1 large egg Use room temperature for best results.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Add-ins

  • 1 cup chocolate chips Can use milk or dark chocolate.
  • 1 cup mini Reese’s peanut butter cups, chopped Add more or less depending on preference.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the peanut butter, sugar, brown sugar, egg, vanilla extract, and baking soda. Mix until smooth and well combined.
  • Gently fold in the chocolate chips and the chopped mini Reese’s peanut butter cups.
  • Using a teaspoon, scoop out portions of the dough and place them onto a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Cooling

  • Let the cookie bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookie bites can be served warm or at room temperature. For an extra special treat, serve with vanilla ice cream or a drizzle of chocolate sauce. Store in an airtight container at room temperature for up to a week.
