  • 3/4 cup brown sugar, packed

  • 2 1/4 cups all-purpose flour Use a kitchen scale for accuracy.
  • 1 teaspoon baking soda For leavening.
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Feel free to substitute with white chocolate or butterscotch.
  • 12 mini peanut butter cups To be hidden inside the cookie.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until the mixture is smooth and fluffy.
  • Beat in the eggs, one by one, ensuring they're well blended.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture until fully combined.
  • Fold in the chocolate chips with care.
  • Scoop a portion of dough into your palm and flatten it slightly. Place a mini peanut butter cup in the center and wrap the dough around it until it's completely covered.
  • Arrange the cookies on ungreased baking sheets, giving them space to spread.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow to cool on the baking sheets for a few minutes before transferring them to wire racks.

Notes

For added enjoyment, serve the cookies warm with a scoop of vanilla ice cream or drizzle with melted chocolate. To store, keep in an airtight container at room temperature for up to a week.
