  • 1/2 cup fresh or frozen raspberries
  • 3/4 cup almond milk or coconut milk
  • 1 tbsp maple syrup Adjust sweetness to taste.
  • 1/2 tsp vanilla extract
  • 1/4 cup chia seeds

Preparation

  • In a blender, combine the raspberries, almond milk (or coconut milk), maple syrup, and vanilla extract. Blend until the mixture is smooth.
  • Pour the blended mixture into a bowl. Add the chia seeds, then whisk together until everything is well combined.
  • Cover the bowl and place it in the fridge for at least 1 hour, or ideally overnight. This allows the chia seeds to absorb the liquid and thicken the pudding.
  • Once set, serve your Raspberry Chia Pudding with your favorite toppings.

Notes

Store in an airtight container in the refrigerator for about 3–5 days. Stir well before serving, as chia seeds may settle at the bottom.
