Main Ingredients

  • 1 piece ripe avocado Make sure the avocado is ripe for best flavor.
  • 1 cup plain Greek yogurt You can use dairy-free yogurt for a vegan option.
  • 1/4 cup unsalted pistachios Plus more for topping.
  • 2–3 tbsp maple syrup or honey Adjust for sweetness according to taste.
  • 1 scoop vanilla or pistachio protein powder Chocolate protein powder can be used for variation.
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract Optional.
  • 1/4 tsp ground cardamom Optional; experiment with spices.
  • 1–2 tbsp milk (almond, oat, or dairy) As needed for blending.
  • 1 pinch salt

Instructions
 

Preparation

  • Add pistachios to a food processor or high-speed blender and pulse until finely ground.
  • Add avocado, Greek yogurt, protein powder, maple syrup, vanilla extract, almond extract (if using), cardamom, and a pinch of salt.
  • Blend until smooth and creamy, scraping down sides as needed. Add milk 1 tbsp at a time until desired pudding consistency is reached.
  • Taste and adjust sweetness or spice level if desired.
  • Scoop pudding into individual serving bowls.
  • Chill in the refrigerator for 30–60 minutes for best texture.

Notes

Serve in small bowls, garnished with extra chopped pistachios. Pudding can also be paired with fresh fruit like berries or banana slices. To store leftovers, use airtight containers in the refrigerator for up to 3 days. Stir before serving again as it may thicken.
