Ingredients
  

For the Mousse

  • 1 cup shelled pistachios Fresh pistachios are best for flavor.
  • 2 cups heavy cream, divided Use part for whipping and part for ganache.
  • 1 cup sugar
  • 3 large egg whites
  • 1/4 cup chocolate, chopped For chocolate ganache.
  • 1 cup dark chocolate chips
  • 1/4 cup chopped pistachios For garnish.

Preparation

  • Soak the pistachios in warm water for about 2 hours. Drain and blend them until you achieve a smooth puree.
  • In a mixing bowl, whip 2 cups of heavy cream until soft peaks form, gradually adding the sugar as you mix.
  • Gently fold the pistachio puree into the whipped cream until well combined.
  • In a separate bowl, whip the egg whites until stiff peaks form; then fold this into the pistachio mixture gently.

Ganache and Assembly

  • For the ganache, heat 1/2 cup of heavy cream until it simmers, then pour it over the chopped chocolate. Stir until smooth and glossy.
  • Layer the pistachio mousse into serving dishes, topping with the chocolate ganache.
  • Finish with a sprinkle of chopped pistachios.
  • Chill in the refrigerator for at least 2 hours before serving for the best flavor and texture.

Notes

To serve, use elegant glass dishes to showcase the layers. Drizzle extra chocolate ganache on top and consider pairing with fresh raspberries or a dusting of cocoa powder. Whipped cream can also be added for extra flair. Leftovers can be stored in an airtight container for up to 3 days but are best enjoyed fresh.
