Ingredients
  

For the Sandwich

  • 2 slices slices of bread Choose your favorite!
  • 2 tablespoons pesto sauce Homemade or store-bought
  • 2 slices cheese Mozzarella, provolone, or cheddar work wonderfully
  • as needed Butter or olive oil For grilling

Instructions
 

Preparation

  • Spread pesto sauce on one side of each slice of bread for an even layer.
  • On the un-pesto side of one slice, lay down a slice of cheese.
  • Place the second slice of bread on top, ensuring the pesto side is facing out.

Cooking

  • Heat a skillet over medium heat and add a bit of butter or olive oil.
  • Grill the sandwich until it’s golden brown and the cheese is melted, about 3-4 minutes per side.

Serving

  • Serve warm and enjoy the melty goodness.

Notes

For variations, try using different types of pesto, adding tomatoes or spinach, or serving with a side of tomato soup. To store leftovers, wrap in foil or place in an airtight container for up to 3 days, and reheat in a skillet on low heat.
