  • 2 slices slices of your favorite bread Options include sourdough, whole grain, or classic white.
  • 2 slices slices of cheese Choose from cheddar, mozzarella, or your favorite.
  • 2 tablespoons pesto Can be homemade or store-bought.
  • as needed Butter or olive oil For grilling.

Preparation

  • Spread the pesto on one side of each slice of bread.
  • Place a slice of cheese on the non-pesto side of one slice of bread.
  • Top with the other slice of bread, ensuring the pesto side is facing down.

Grilling

  • Heat a skillet over medium heat and add butter or olive oil.
  • Grill the sandwich for about 3-4 minutes on each side, flipping when golden brown and the cheese is melted to your liking.
  • Cut the sandwich in half and serve warm.

Notes

Best served with a side of tomato soup, salad, or chips. Store leftovers in an airtight container in the fridge for up to three days, or freeze ungrilled sandwiches for up to a month.
