Preparation

  • Preheat your oven to 425°F (220°C).
  • Peel and chop the carrots into evenly sized pieces, roughly 1-2 inches long.
  • In a mixing bowl, toss the carrot pieces with olive oil, salt, and pepper until evenly coated.
  • If you’re feeling sweet, add honey to the mix and toss again for added flavor.
  • Spread the carrots out in a single layer on a baking sheet to ensure even roasting.

Cooking

  • Roast for 25-30 minutes, stirring halfway through, until the carrots are tender and beautifully caramelized.
  • Once done, remove from the oven and toss with fresh herbs, if using, before serving.

Notes

To store leftovers, let the carrots cool completely before transferring them to an airtight container. They can be stored in the fridge for up to four days. For reheating, a quick toss in the microwave works, but for crispness, pop them back in the oven for a few minutes.
