  • 1 cup finely chopped pecans
  • 1 cup crushed vanilla wafers
  • 1 cup powdered sugar Additional powdered sugar for rolling
  • 1/2 cup corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional) For extra flavor

Preparation

  • In a large bowl, combine the finely chopped pecans, crushed vanilla wafers, powdered sugar, corn syrup, and vanilla extract. Mix until everything is well incorporated.
  • If you’re using chocolate chips, gently fold them into the mixture.
  • Take small portions of the mixture and roll them into balls, about 1 inch in diameter.
  • Roll each ball in powdered sugar until fully coated.
  • Place the coated balls on a baking sheet lined with parchment paper.
  • Refrigerate for about 30 minutes to allow them to set before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen with parchment paper between each ball for longer storage.
