Phyllo Pastry

  • 6 sheets phyllo pastry Thawed if frozen, and cut in half lengthwise to create 12 smaller sheets.
  • ¼ cup melted butter or olive oil Use for brushing the phyllo, creating a golden, crispy texture.

Chili Honey Drizzle

  • ¼ cup honey Opt for a light, runny honey for easy drizzling.
  • ½ tsp red chili flakes Adjust to taste for a milder or spicier kick.

Preparation

  • In a medium mixing bowl, combine the crumbled feta, ricotta cheese, and fresh thyme leaves (if desired). Mix until smooth and well combined. Set aside.
  • Unroll the phyllo pastry sheets, covering them with a damp kitchen towel to prevent drying.
  • Cut each sheet in half lengthwise to create 12 strips.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Assembly and Baking

  • On a clean surface, place one strip of phyllo pastry and lightly brush it with melted butter or olive oil.
  • Spoon about 1 tablespoon of the cheese filling near one end of the phyllo strip.
  • Fold the sides of the pastry inward, then roll tightly to form a neat roll. Place seam-side down on the baking sheet.
  • Repeat the process for the remaining strips and filling, arranging them on the baking sheet with some space between.
  • Brush the tops of the rolls with more melted butter or oil for a golden finish.
  • Bake for 15-20 minutes or until golden brown and crispy.

Chili Honey Preparation

  • While baking, warm the honey in a small saucepan over low heat. Stir in the red chili flakes and let it infuse for 1-2 minutes.
  • Once baked, let the rolls cool slightly, then drizzle the warm chili honey over them or serve it on the side.
  • Garnish with extra thyme leaves, if desired.

Notes

These rolls are fantastic as a standalone snack or appetizer. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in an oven at 350°F (175°C) for about 10 minutes to restore crispiness.
