  • 8 oz pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups milk Can substitute with half-and-half or dairy-free alternatives
  • 1 cup grated Parmesan cheese Can substitute with Pecorino Romano or dairy-free cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

  • In a large pot or skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn the garlic.
  • Add the pasta and milk to the pot, stirring to combine the ingredients. Bring the mixture to a gentle simmer.
  • Cook the pasta according to the package instructions, stirring occasionally, about 10-12 minutes, or until the pasta is al dente and the sauce has thickened.
  • Once the pasta is cooked, remove the pot from heat and stir in the grated Parmesan cheese until melted and a creamy sauce forms. Season with salt and pepper to taste.
  • Serve immediately, garnished with fresh parsley if desired.

Notes

To store leftovers, place the pasta in an airtight container and refrigerate for up to 3 days. Reheat gently on the stove over low heat, adding a splash of milk if the sauce has thickened too much.
