  • 1 cup balsamic vinegar
  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced

  • Begin by heating olive oil in a large skillet over medium heat.
  • Season the chicken breasts generously with salt and pepper, then place them into the hot skillet.
  • Cook the chicken for about 6-7 minutes on each side until they are golden brown and fully cooked through.
  • Once cooked, remove the chicken breasts from the skillet and set them aside.
  • In the same skillet, pour in the balsamic vinegar and bring it to a simmer. Let it cook for about 2-3 minutes.
  • Return the chicken to the skillet and add the halved cherry tomatoes. Cook for another 3-4 minutes, allowing the tomatoes to soften.
  • Top each chicken breast with slices of mozzarella cheese, then cover the skillet to help the cheese melt.
  • Once the cheese is beautifully melted, sprinkle with fresh basil before serving.

To showcase this dish, serve it atop a bed of quinoa or couscous. Pair with a simple green salad or crusty bread for soaking up the delicious balsamic sauce. For best results, avoid overcrowding the pan when cooking the chicken and let it rest after cooking to retain juices.
