  • 1 pound chicken thighs or breasts for juicy goodness
  • 1 cup long-grain or jasmine rice works well
  • 1 cup chicken broth for added flavor
  • 1/2 cup honey the star for sweetness
  • 1/2 cup BBQ sauce pick your favorite brand
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion, diced to build flavor
  • 2 cloves garlic, minced because garlic makes everything better
  • to taste salt and pepper for seasoning
  • to taste chopped green onions for garnish

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken with salt and pepper, then brown each piece in the skillet for about 5 minutes on each side until golden brown.
  • Once browned, remove the chicken and set aside on a plate.
  • In the same skillet, add the diced onion and minced garlic. Sauté until the onion is softened and fragrant.
  • Add rice to the skillet, stirring and toasting it for 1-2 minutes.
  • Pour in the chicken broth, honey, and BBQ sauce. Stir everything together to combine well.
  • Nestle the chicken back into the skillet. Bring it to a simmer, then cover and reduce the heat.
  • Let it cook for about 20 minutes, or until the rice is tender and the chicken is cooked through.
  • Fluff the rice with a fork, garnish with chopped green onions, and serve hot.

Notes

For extra flavor, marinate the chicken in BBQ sauce beforehand. You can enhance smokiness with smoked BBQ sauce or add veggies for color and nutrition. Experiment with different sweeteners or sauces for variations.
