Ingredients
  

For the stuffing

  • 8 ounces mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the chicken

  • 4 pieces boneless, skinless chicken breasts
  • Olive oil for cooking

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Sauté minced garlic and chopped mushrooms until soft and moisture evaporates.
  • In a separate bowl, combine the cooked mushrooms with cream cheese, Parmesan, thyme, salt, and pepper until everything is well blended.
  • Gently cut a pocket into each chicken breast and fill it with the mushroom mixture.

Cooking

  • Heat more olive oil in the skillet, then sear each chicken breast until they turn golden brown on both sides.
  • Transfer the chicken to a baking dish and bake for about 20-25 minutes, or until fully cooked through.
  • Allow the chicken to rest for a few minutes before slicing and serving.

Notes

For variety, swap out the mushrooms for spinach or sun-dried tomatoes. Serve with a green salad, roasted vegetables, or creamy mashed potatoes.
