Ingredients
  

Meat Filling

  • 1 lb ground beef (or ground turkey/lamb) Choose your preferred meat.
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 cup frozen peas and carrots
  • 2 tbsp tomato paste
  • ½ cup beef broth Or use vegetable broth for a vegetarian option.
  • 1 tsp Worcestershire sauce
  • to taste Salt and pepper

Mashed Potato Topping

  • 3 large potatoes, peeled and chopped
  • ¼ cup milk (or plant-based alternative)
  • 2 tbsp butter (or vegan butter)
  • 1 cup Shredded cheddar cheese (for topping) Optional

Garnish

  • to taste Fresh parsley, chopped For garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Boil the peeled and chopped potatoes in salted water for about 10–12 minutes or until fork-tender. Drain and mash them with milk, butter, salt, and pepper until smooth.

Cooking the Filling

  • In a skillet over medium heat, cook the ground meat until browned, draining any excess fat.
  • Add the chopped onion and minced garlic to the pan, sautéing until translucent.
  • Stir in the frozen peas, carrots, tomato paste, beef broth, and Worcestershire sauce. Allow the mixture to simmer for 3-5 minutes until slightly thickened.

Assembly and Baking

  • Grease a muffin tin and fill each cup about ⅔ full with the meat filling.
  • Spoon or pipe the creamy mashed potatoes on top of the meat mixture.
  • Optional: Sprinkle shredded cheese on top for an added layer of yum.
  • Bake for 10–15 minutes, or until the tops are golden brown. If you want a crispier texture, broil for an additional 2-3 minutes.

Serving

  • Serve warm, garnished with freshly chopped parsley.

Notes

Consider adding fresh herbs like thyme or rosemary for extra flavor. You can prepare these in advance and keep them in the fridge until you're ready to bake.
