Ingredients
  

Beef and Filling

  • 1 lb Beef Tenderloin, cut into small, bite-sized pieces For the best results, use grass-fed or quality beef.
  • 8 oz Mushrooms, finely chopped Button or cremini mushrooms are ideal.
  • 2 medium Shallots, finely chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh Thyme Chopped or whole leaves.
  • 2 tbsp Butter For sautéing.
  • 2 tbsp Dijon Mustard For spreading on beef.

Pastry Preparation

  • 1 pkg Puff Pastry, store-bought, thawed Ensure it is fully thawed before use.
  • 1 large Egg, beaten For egg wash.
  • to taste Salt and Black Pepper For seasoning.

Preparation

  • Generously season the beef tenderloin pieces with salt and pepper.
  • Sear the beef in a hot skillet over medium-high heat for 1-2 minutes on each side until nicely browned. Set aside to cool.
  • In the same skillet, melt butter over medium heat. Add finely chopped mushrooms, shallots, garlic, and thyme. Cook for about 8-10 minutes until golden brown and moisture has evaporated. Season with salt and pepper, then let cool.
  • On a lightly floured surface, roll out the thawed puff pastry and cut into 3x3-inch squares.

Assembly

  • In the center of each pastry square, spoon a small amount of the cooled mushroom mixture.
  • Place a piece of the seared beef on top and spread a thin layer of Dijon mustard over the beef.
  • Fold the corners of the pastry up around the filling and seal tightly to prevent leaks during baking.
  • Arrange the assembled bites on a parchment-lined baking sheet and chill in the refrigerator for at least 20 minutes.

Cooking

  • Before baking, brush each bite with the beaten egg.
  • Preheat the oven to 400°F (200°C). Bake for 12-15 minutes or until the pastry is puffed and golden brown.
  • Allow to cool slightly before serving. Enjoy warm for the best experience!
