Ingredients
  

Eggs and Bacon

  • 6 large large eggs Older eggs are easier to peel.
  • 6 slices bacon Opt for thick-cut bacon for extra crunch.

Filling Ingredients

  • 3 tablespoons mayonnaise Can substitute with Greek yogurt or mashed avocado.
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • to taste Salt
  • to taste Pepper
  • Chopped for garnish chives Add for presentation.

Preparation

  • Place the eggs in a pot and cover with water. Bring to a boil, cover, and remove from heat. Let sit for 12 minutes.
  • Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
  • Transfer eggs to an ice water bath to cool. Peel and slice each egg in half.
  • Scoop yolks into a bowl and mash with mayonnaise, mustard, vinegar, salt, and pepper until smooth.
  • Fold in crumbled bacon until evenly combined.
  • Spoon or pipe yolk mixture back into egg whites.
  • Garnish with chopped chives and additional bacon if desired.
  • Serve chilled.

Notes

Serve on a beautiful platter, pair with a light salad or fruit for balance. Goes well with white wine or cocktails. Store leftovers in an airtight container and consume within 2-3 days for best flavor.
