Meatloaf Layer

  • 1 lb ground beef preferably 85/15 for optimal fat content
  • 1/2 cup plain breadcrumbs
  • 1/3 cup milk
  • 1 ea egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Mashed Potato Layer

  • 3 cups prepared or leftover mashed potatoes
  • 1/4 cup sour cream
  • 2 tbsp butter
  • to taste salt & pepper

Topping

  • 1 1/2 cups shredded cheddar cheese
  • to taste fresh parsley optional, for garnish

Preparation

  • Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish lightly or line it with parchment paper for easy cleanup.
  • In a large bowl, mix together the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Be careful not to overmix; just blend until combined.
  • Transfer the meat mixture into the prepared baking dish, pressing it down evenly. Bake uncovered for about 20–25 minutes until it’s partially cooked.
  • Meanwhile, warm your mashed potatoes in a separate bowl and stir in the sour cream and butter for extra creaminess. Season with salt and pepper to taste.
  • Once the meatloaf has baked, spread the prepared mashed potatoes evenly across the top.
  • Sprinkle the shredded cheddar cheese over everything and return the dish to the oven. Bake for another 10–15 minutes or until the cheese is melted and bubbly.
  • Once done, allow it to cool for 5–10 minutes. Garnish it with chopped parsley if desired, slice, and serve.

Notes

Feel free to swap out the ground beef for ground turkey or plant-based alternatives. For serving, consider pairing with steamed green beans or a garden salad. Refrigerate leftovers in an airtight container for up to 3–4 days or freeze for up to 2 months.
