  • 2 pieces boneless, skinless chicken breasts About 1 pound
  • 8 ounces pasta (penne or fettuccine) Use your favorite type
  • 1 tablespoon olive oil For sautéing

  • 1 cup heavy cream Adjust for desired sauce thickness
  • 1 cup chicken broth Low sodium preferred

Preparation

  • Cook the pasta according to package instructions. Once cooked, drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper. Place the chicken in the skillet and cook until golden brown and thoroughly cooked, about 6-7 minutes on each side. Once cooked, remove the chicken and set it aside.
  • In the same skillet, add minced garlic and sauté for about 1 minute, until it becomes fragrant.
  • Pour in the chicken broth and heavy cream, stirring everything together. Bring it to a gentle simmer.
  • Add the grated parmesan cheese, allowing it to melt and the sauce to thicken slightly.
  • Slice the previously cooked chicken and return it to the skillet.
  • Combine the sliced chicken with the cooked pasta, ensuring all ingredients are well-coated in the creamy sauce.
  • Serve warm, garnished with freshly chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. Reheat gently on the stove with a splash of chicken broth or cream.
