  • 3 pieces Chicken breasts (sliced into thin cutlets)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 6 tablespoons All-purpose flour (for dredging)
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic (minced)
  • 1 cup Chicken broth
  • 1 cup Heavy cream (or coconut cream for dairy-free)
  • 1/2 cup Parmesan cheese (freshly grated)
  • 1 teaspoon Chili flakes
  • 1/4 teaspoon Oregano
  • 1/4 teaspoon Thyme
  • 1/3 cup Sundried tomatoes (chopped, oil-packed)
  • 1 tablespoon Fresh basil (chopped, for garnish)

Instructions
 

Preparation

  • Season chicken cutlets with salt and pepper.
  • Dredge the seasoned chicken in flour, shaking off any excess.
  • In a skillet, heat olive oil and butter and sear the chicken cutlets until golden brown, then set aside.
  • In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  • Pour in the chicken broth to deglaze the pan, scraping up any browned bits.
  • Lower the heat and add in the heavy cream and Parmesan cheese. Let it simmer until the sauce thickens, about 2-3 minutes.
  • Stir in chili flakes, oregano, thyme, and sun-dried tomatoes.
  • Return the seared chicken to the skillet and let it simmer until the sauce thickens further, about 5-7 minutes.
  • Garnish with fresh basil and serve immediately.

Notes

Substitute coconut cream for a dairy-free option. Minimize leftovers by reducing chicken quantity for smaller servings.
