  • 2 tablespoons poppy seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract

Preparation

  • In a mixing bowl, combine rolled oats, almond butter, honey (or maple syrup), lemon juice, lemon zest, poppy seeds, salt, and vanilla extract. Stir until well combined.
  • Scoop out about a tablespoon of the mixture and roll it into balls.
  • Place the energy bites on a baking sheet lined with parchment paper.
  • Refrigerate for at least 30 minutes to set.
  • Once set, enjoy as a healthy snack or breakfast.

Notes

Store the energy bites in an airtight container in the refrigerator for up to a week. They can be frozen for up to three months; just thaw in the refrigerator before enjoying.
